Polly Tyrer gained experience as a cook in Spain and California before joining LEITH'S SCHOOL OF FOOD AND WINE as Vice Principal when it opened in 1975. She later became Managing Director of Prue Leith's catering company LEITH'S GOOD FOOD and went on to develop a freelance career. Polly Tyrer is the author of four books including LEITH'S COOKING FOR ONE AND TWO.

This really is an exceptionally useful book of recipes for vegetable-based meals. We've already cooked 6 or 7 of these recipes and they have been both delicious and fairly foolproof, with clear steps. Like all the Leiths food 'Bibles', it is a large, comprehensive book with a great deal of information, in this case about the wide selection of vegetables, their uses, preparation, etc. Sometimes this is great to consult, but it's not essential and you can just dip in to the recipes right away of course. Some combinations are very unexpected but delicious. Really glad I invested in this big veggie book!
