Synopsis

Russell Norman is a restaurateur. Over the last 20 years he has worked in many of London's landmark restaurants as a waiter, bartender, maitre d', general manager and operations director. In 2009 he founded an independent restaurant company with his best friend and has since opened eight restaurants in central London including Polpo, Spuntino and Mishkin's. His book POLPO: A Venetian Cookbook (of Sorts) and was voted Waterstones Book of the Year 2012. I’d be lying if I said the magnificent tentacular beast on the front cover hadn’t figured significantly in my decision to buy this book. That said, I have not once regretted it. Not only is it a beautiful object (and the lay-flat binding is a godsend in the kitchen), but every one of the recipes I’ve tried just works. I made my first batch of gnocchi the night I bought this, and it wasn’t even a chore: in fact, it was the greenest, zingiest and most-praised dish I think I’ve ever cooked. So it just goes to show: octopuses are good at predicting more than just World Cup results.
