Mary Ellen Capron, MS, RD, has over 20 years' experience working in the health care environment. She received her master's degree in Nutrition from the University of Bridgeport and her undergraduate degree from the College of Saint Elizabeth in Morristown, New Jersey. She has worked with all age groups in acute, chronic, and short- and long-term facilities. In these facilities, she has worked as a staff person and as an administrator. At Overlook Hospital in Summit, New Jersey, she held various positions from staff dietitian to the Clinical Nutrition Manager. In this capacity, she was instrumental in formulating the diets of over 500 patients a day and of overseeing the preparation of the food. Ms. Capron was a member of various state bodies that formulated regulations for all in-patient facilities within New Jersey. As a member of the health care team, she was often called on to teach students and graduate personnel. She has worked as a nutrition consultant for several physician groups and enjoys educating the community on eating practices. Elena Zucker, RN, MSN, has been an active contributor to the nursing and home health care profession for 37 years. As a graduate nurse, she worked in the community in Washington D.C., New York, and New Jersey. She has helped author both federal and state legislation. She has taught at Fairleigh Dickinson University in the graduate nurse program and has been a speaker on both the state and federal level. In her capacity as administrator of a federal grant to The Home Health Agency of New Jersey to train homemakers/home health aides in New Jersey, she was the guiding force in training thousands of aides to meet the growing need for this pivotal member of the health team. In this capacity she was instrumental, establishing systems to regulate the curriculum and monitoring the credentialing of the students. Ms. Zucker has held positions at Overlook Hospital, New Jersey, as the Director of Community Health, Director of Nursing, and Chief Nursing Officer. She now focuses her energies on consulting, being an expert witness, writing, and volunteer work for a local agency that provides services to families so that their elderly adult members may remain at home.
