On the plus side, yes, full of interesting information. Unfortunately, virtually unreadable. For a start, much of the most interesting material is found in the notes rather than the text.. Then there are the endless 'I'm so clever I know what you're thinking' asides and 'isn't this amazing' exclamations. (Memo to editors: one exclamation mark per section would still be too many, one per chapter quite enough.) The writing style is like being in the presence of an over enthusiastic and badly trained puppy. And the namedropping of famous chefs is also tiresome, especially the instance on page xxvii and note 29 that appears to be nothing more than a settling of a scores.. I gave up after five chapters. As an antidote, I recommend Harold McGee's highly informative and elegantly written 'On Food and Cooking'.
